About us

We began with a small number of hens and a simple approach. Do things properly. Like many Irish family businesses, Connolly’s Eggs was built steadily over time through hard work, careful investment and long-term thinking. As the business grew, so did the responsibility that came with it.

The Beginning...

​John Joe and Veronica Connolly began producing eggs with just 300 laying hens, supplying local retailers across County Monaghan. What started as a small family operation was built on hard work, consistency and a belief in doing things properly from day one.

1990s
Building the Business

As demand grew, Connolly’s Eggs steadily expanded production while continuing to focus on quality, welfare and dependable supply. The business remained family led, with every stage carefully managed and standards closely maintained.

Organic Trust Certification

Connolly’s Eggs became the first flock in Ireland to be commercially certified by the Organic Trust. This marked an important step forward in the development of the business and reinforced the Connolly family’s commitment to high standards and responsible production.

National listing in Lidl

Securing a listing with Lidl marked another significant milestone for Connolly's Eggs. Today, we continue to build on that partnership, supplying our Irish eggs to Lidl stores nationwide every day.

Growing National Supply

Connolly’s Eggs continued expanding across retail and foodservice supply throughout Ireland. The business developed long-term relationships with leading retailers while also growing the Connolly’s-branded range across the Organic, Corn Fed Omega 3, Free Range and Barn Egg categories. By this stage, Connolly’s Eggs had become one of Ireland’s leading egg producers.

Listing in Aldi

Our nationwide Aldi listing was another defining moment in the growth of Connolly's Eggs. A testament to our commitment to producing premium-quality Irish eggs that consumers and retailers trust.

BRC Accreditation

Connolly’s Eggs achieved BRC AA accreditation, reinforcing the company’s focus on food safety, quality assurance and retailer standards.

Expanding Production

As the business continued to grow, Connolly’s invested in modern production systems, grading facilities and purpose built housing designed around welfare, consistency and long term sustainability. The business also developed its fully integrated “birth to shelf” approach, managing every stage from rearing through to packing and delivery.

Major Packing Centre Investment 

A major milestone came in 2020 with the installation of a new high-capacity egg grading system. This investment modernised the entire production facility, significantly increasing efficiency while further strengthening the quality, traceability and consistency that Connolly's Eggs is known for.

Satelite Growers

In 2024, we proudly expanded our network of trusted satellite growers across Ireland. These long-term partnerships allow our growers to focus on producing the highest quality eggs, while Connolly's Eggs manages grading, packing, distribution and access to markets nationwide. Together, we're strengthening the future of Irish egg production.

Connolly’s Eggs launched across all Irish Marks & Spencer stores following a new supply partnership with the retailer. For the Connolly family, it marked a major milestone in a journey that began decades earlier with just 300 hens in County Monaghan. Over time, Connolly’s Eggs developed into one of Ireland’s leading egg producers supplying retailers, foodservice providers and consumers across Ireland.
